Beachbody’s Ultimate Reset: Week 1 Reclaim
This week I finally made time to begin Beachbody’s Ultimate Reset. A 21-day body cleanse program broken into three one week phases; Reclaim, Release, and Restore. The benefit of doing this program include removal of toxins from our body, weight loss, increased energy, lowering the bad cholesterol, boost mood and mental clarity and improve regularity. Basically filtering out your body to remove toxins and bad elements to reset it back to a healthier state.
Vegetarian Biscuits and Cauliflower Gravy
Breakfast is by far my favorite meal to enjoy at anytime of the day. Every now and then when I’m eating breakfast at a café or diner, I see a plate of biscuits and gravy go by that looks delicious. Unfortunately as a pescatarian for the last twenty years I’ve never found a place that makes a vegetarian version of biscuits and gravy.
Homemade Hot Sauce
Over the last year I’ve been making batches of my own hot sauce. I have a strong affinity for spicy foods and have always enjoyed various hot sauces. Some of my favorites include Melinda’s Habanero variations, Tapatio, Sriracha, and Garlic Tabasco to mention a few. There are always 3 to 10 bottles of something spicy in our house.
Vegan Lentil Chili
Last night I made a big pot of delicious lentil chili that turned out amazingly yummy. I saw the original vegan lentil chili recipe over on the Whole Foods Market site, but I made some adjustments to it which I feel enhanced the flavors and made it even better. As a vegetarian, lentils provide a great source of protein and fiber, in addition to being really healthy for our bodies. This is a very simple recipe that leaves plenty of room to experiment in making your own favorite style.
Lentil and Kale Veggie Salad
A few nights ago I made a delicious salad using black lentils, fresh kale, and veggies. I was really experimenting with what we had a home along with a few fresh ingredients from the farmers market. I had a package of bamboo roots from the asian market which are a little like artichoke hearts or hearts of palm but firmer, I combined it with farm fresh carrots, cucumbers, and feta cheese to make for a nice earthy meal.
Raw Vegetable Salad
In the warm summer days, nothing is more refreshing than a cool raw vegetable salad. The crisp crunch of vegetables that have marinated in a vinegar base dressing for a little while help cool your body while feeding it good nutrition. The same day I made the roasted squash soup, I also made a raw veggie salad.
Roasted Squash Soup
I love a well made soup, one of my favorites is roasted squash soup. The richness of the roasted squash combined with earthy spices puréed into a creamy blend of bliss! I like to add coconut milk instead of cream, I find it creates a delightful subtle flavor of coconut coming through in each spoon full.
Pickled Cauliflower
Lately I’ve been on a cauliflower kick and it has become another favorite vegetable that I’ve come to throughly enjoy. It wasn’t a popular vegetable in my childhood, like many I would avoid it, and even in my younger adult years I never appreciated it. It wasn’t until I started to discover Aloo Gobi at Indian restaurants, a dish that combines cauliflower and potatoes with curry based Indian dry spices.
